Spinach & Shrimp Pasta Recipe

Looking for a quick, hearty, low-calorie dinner? Yes, it's possible to eat hearty and low-calorie. One of my signature dishes is a shrimp pasta with spinach. It's both delicious and filling.

Shrimp & Spinach Pasta
Ingredients:
1/2 pound to 1 pound of medium shrimp (peeled and deveined)*
6 oz. bag of baby spinach
1 can (14 oz.) of diced Italian tomatoes
1 tsp. lemon pepper seasoning
1/2 teaspoon salt
1 1/2 tsp. garlic powder
1 tsp. oregano
2 tbsp olive oil
​(Your favorite cooked pasta, spaghetti or vermicelli works best but farfalle/bow tie or rigatoni works too!

Directions:
  • Add olive oil to sauté pan or skillet, heat on medium 
  • Place cleaned shrimp in bowl add lemon pepper, salt, & garlic powder mix to season
  • Add seasoned shrimp to pan and cook until done (your preference pink or darker) on each side
  • Add spinach and oregano, mix in until spinach starts to wilt
  • Add tomatoes, mix and then lower heat allowing to simmer for ten minutes
  • Serve hot over cooled pasta. Sprinkle with parmesan cheese or squeeze lemon for extra flavor.
  • Enjoy!​​

*Uncooked shrimp can cause illness, please make sure your shrimp are cooked through.

(A cup of pasta with 6 shrimp and 1/4 cup of the spinach/tomato mixture is roughly a 300 cal serving.)
